Amish Peanut Butter Spread – this stuff is CRAZY good!!! Brown sugar, water, corn syrup, vanilla, peanut butter, and marshmallow creme. Great on bread or straight off the spoon!! Will keep for months in the fridge!
In a small saucepan combine the first 3 ingredients. Bring to a boil. Remove from heat and cool completely.
In the bowl of a stand mixer, combine peanut butter, marshmallow creme and vanilla extract. Beat on low just until combined. Slowly add in the brown sugar mixture. Beat on medium speed until fluffy, about 2 minutes. Store in refrigerator up to 3 months.
Notes:
You can use smooth or crunchy peanut butter.
Feel free to add some maple extract and/or cinnamon to the mixture.
Can substitute real maple syrup or honey for the light corn syrup in this recipe.
I used a stand mixer to make the spread. If you don't have a stand mixer, you can use a mixing bowl and a handheld mixer or stir by hand.
